Roasted Cauliflower

Vegetables are good for you. Yeah, we all know that and we all heard it a billion times. 5 portions of vegetables a day. I love vegetables but sometimes they seem so boring. Me and my husband have a way to fix all the boring vegetables- olive oil and garlic. It’s no different with garlic roasted cauliflower- it has a nice texture and garlic gives it a little something extra.


I chopped cauliflower head into bite size pieces.


Then I tossed cauliflower into a baking sheet and poured some olive oil on top and sprinkled crushed garlic, salt, pepper and garlic powder. You can go crazy and add some Parmesan on top, it’s amazing! We were trying to be good that day so we skipped that. Then I baked it at 450 F for 20 minutes, until slightly browned on the sides.


Serve hot, fresh from the oven. I like to add some fresh parsley on top.

  • 1 cauliflower head
  • 3 garlic cloves
  • 3 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 teaspoons of garlic powder
  • Parmesan cheese (optional)


  1. Preheat oven to 450 F.
  2. Chop cauliflower into bite size pieces.
  3. Spread it on a baking sheet, cover evenly with olive oil, chopped garlic and spices.
  4. Bake for about 20 minutes, until golden brown.
  5. Serve hot.
