Strawberry Feta Salad

Today’s salad is the ultimate summer lunch recipe! I’ve seen so many versions of this salad- gorgonzola instead of feta, pecans or almonds instead of walnuts, onions or no onions, different versions balsamic dressing. My mom, for example, makes a salad like this but with pomegranate instead of strawberries and my mom-in-law makes one like that with a blueberry dressing. Feel free to choose your option. What I am presenting here today is my personal favorite.

The weekend is over and I got to admit I was so bad when it comes to the diet. We had beer, potato chips and midnight snacks :/ I don’t know how about you but I always have the best motivation on Mondays, it’s the new week and a new chance to stick to a healthy diet. Healthy doesn’t necessarily have to mean boring. Try the strawberry walnut salad which is so refreshing, effortless and quick that you’ll want to make it all the time. It will leave your stomach happy and healthy. This salad is light, delicious and has a nice nutty crunch to it and a combination of strawberry, walnuts and feta is a mix made in heaven.

I bought washed greens so I just placed them in a bowl. Then I chopped walnuts and sliced 1/4 of red onion. I washed and quartered strawberries. I combined all ingredients in a bowl.

I mixed balsamic vinegar, olive oil, salt, sugar and a lime juice in a bowl.

Finally, I poured ready dressing over all the ingredients. Yes, it’s that easy! Enjoy!

Ingredients:

  • 1 package of baby spinach and baby green mix (5 oz)
  • 1/2 cup of crumbled feta
  • 1/4 of red onion
  • 1 cup fresh strawberries
  • 1/4 cup of walnuts
  • 2 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • juice from 1/2 lime
  • 1 teaspoon of salt
  • 1 teaspoon of sugar

Directions:

  1. Chop walnuts and onion. Quarter strawberries.
  2. Place all ingredients, except for dressing, in a bowl.
  3. Combine balsamic vinegar, olive oil, salt, sugar and lime juice together.
  4. Pour dressing over all ingredients and mix. Enjoy!
