Creamy pumpkin sauce

It’s the National Pumpkin Day today and we are only 5 days away from Halloween! I am crazy about this holiday. I’m not sure if it’s because it’s not celebrated in Poland as much and it’s new to me or it’s because it’s just so freaking fun! We decorated our whole apartment over a month ago, watched all Halloween classics already and right now as I right that post I listen to the Halloween radio on Pandora :).

Today I made a creamy pumpkin sauce that is great with pasta. It takes 10 minutes to make and it’s seriously addicting. I love cooking with pumpkin but if not prepare right, it can be a bit bland, but the addition of fried onion, Parmesan cheese and spices makes it taste amazing. It’s creamy, rich and pleasantly satisfying. In this recipe used my homemade noodles but you can use any pasta you like.

I started with frying chopped onion with 1 tablespoon of butter. It needs to be butter which works so much better than olive oil for example. I fried it until golden.


Then I added pumpkin puree. You can either use a store-bought canned one or roast a pumpkin and process it in a blander which is what I did. Then I added cream cheese, grated Parmesan, salt and pepper and simmered my sauce for 5 minutes so all the flavors would be mixed evenly.


At the end, I let my sauce cool down for few minutes and mixed in sour cream. That’s all! Enjoy!

  • 1 onion
  • 1 tablespoon of butter
  • 2 cups of pumpkin puree
  • 1/4 cup of cream cheese
  • 1/2 cup of sour cream
  • 1/4 cup of grated Parmesan cheese
  • 1 teaspoon of salt
  • 1 teaspoon of pepper


  1. Dice and fry onion with 1 tablespoon of butter until golden.
  2. Add pumpkin puree, cream cheese, Parmesan cheese and salt and pepper. Simmer for 5 minutes.
  3. After the sauce cools down a bit add sour cream. Enjoy!
