Lviv salad

Lviv salad (or sałatka lwowska in Polish) is a delicious salad with somewhat surprising ingredients. I was watching tv at my parents’ house and saw a show called ‘Kuchenne rewolucje’ (‘kitchen revolutions’) in which a famous food critic and chef Magda Gessler told owners of one Ukrainian restaurant to inculde this salad in their menu. I looked it up and thought that it l was amazing! I run to the store and picked up a few things and made it the same day. I loved it and so did my parents. We emptied our plates in a second and then got another helping and then another one.

Lviv salad is very Eastern European. We have a lot of salads consisting of cooked vegetables, like carrots and potatoes which are pretty mild and in this salad they are nicely offset with the sourness of pickled herring, pickles and pickled mushrooms. There is also sweetness and crunchiness of apple. Lviv salad is such a delicious mix with an incredibly complex flavor, you just need to try.

I started with boiling unpeeled carrots, potatoes and beets. It took about 20 minutes for potatoes and carrots and another 20 minutes for beets. Cooking time may vary, veggies should be soft but not falling apart.

I was lucky enough to find a jar of beautiful pickled mushrooms in my parents basement. They were so delcious! My parents said this year was a great year for mushrooms. I will surely take advantage of that in any form I can- pickled and dried.

In the meantime I diced peeled apples, onion, pickles, pickled herrings and pickled mushrooms (I know, it’s a lot of pickled things!) and sprinkled everything with lemon juice. When the veggies were cooked, I peeled them and diced and added to the rest of ingredients.

I combined together all sauce ingredients.

Just look at all the beautiful colors! Isprinkled my salad with chopped green onions and mixed in my salad dressing.

Ingredients:

  • 4 pickled herring fillets
  • 4 beets
  • 2 potatoes
  • 4 pickles
  • 2 apples
  • 2 carrots
  • 1 onion
  • 1 cup of pickled mushrooms
  • lemon juice
  • green onions
  • sauce:
    • 1 cup of sour cream
    • 3 tablespoons of mustard
    • 1 tablespoon of sugar
    • 1 teaspoon of each: salt and pepper

Directions:

  1. Cook unpeeled potatoes, carrot and beets until soft.
  2. Peel apples. Dice apples, onion, pickled herring, pickles and pickled mushrooms. Sprinkle with lemon juice.
  3. Peel cooled cooked potatoes, carrot and beets. Dice them and add to the rest of the ingredients.
  4. Mix sour cream, mustard, sugar, salt and pepper and mix in with the rest of the ingredients. Enjoy!
