Meringue cookies with lemon curd

A few days ago I made these meringue cookies with lemon curd for the first time. To be perfectly honest I didn’t even plan on making them but I had some egg whites leftover from another recipe that required just egg yolks. And if you know me, you already know I don’t like wasting food so I came up with this idea. Even though meringue cookies require only 3 simple ingredients their structure is a little tricky and the technique is the key.

I realize most people probably know how to make meringue cookies but I put a new spin on them with some lemon curd. I love meringue cookies in things, like with cake, but sometimes I feel like they may be a little sweet and bland on their own. That is why, I think lemon curd is perfect- adds tartness, sourness and creaminess to the texture.

Btw, how was everyone’s Valentine’s Day? This holiday becomes more and more popular in Poland but I feel like some people are skeptical of it, claiming that you should be celebrate your love everyday and that they don’t like the pressure for big romantic gestures on that one particular day. Even some of my American friends refer to the Valentine’s Day as ”cheesy”. I, however, think every occasion to do something special and to spend some quality time with your loved ones is great. Me and my husband usually go out a few days before for a nice dinner to avoid the crowds and on the actual day we cook together at home and open some champagne. Yesterday, I even made him watch a romantic comedy muahahah <evil laughter>

Back to the cookies though. I beat cold egg whites and a pinch of salt with my hand mixer. When they turned stiff I gradually started adding sugar.

I squeezed the egg white mixture on a baking sheet with a decorating pipe. You can do it with a spoon or make any shape you want. I baked the cookies at 230 F for a little over an hour. You want them crunchy and completely dry outside and a tiny bit chewy inside.

I spread a tablespoon of lemon curd on a flat side of the cookie and covered with another one.

  • 3 egg whites
  • 1 cup of sugar
  • a pinch of salt
  • 1/2 cup of lemon curd


  1. Preheat the oven to 230 F.
  2. Beat cold egg whites with a pinch of salt, gradually add sugar while still beating the mixture.
  3. Squeeze the mixture of desired shape on a baking sheet.
  4. Bake meringue cookies for about 1 hour- 75 minutes.
  5. Assemble 2 cookies with lemon curd between them. Enjoy!
