Baked kiełbasa with colorful veggies


A great recipe for an easy and delicious one pan dinner. It’s low-carb, colorful and amazingly flavorful. There are a lot of changes lately in my life, my husband switched jobs and we’re moving so I’m all about the kind of meal you can just throw in the oven or make in one pot. This one is seriously a keeper. It will take you about 25 minutes to make and you can easily modify it and use your favorite vegetables.

I used kiełbasa but I think an Italian or a bratwurst would work just as well. Polish sausage is smoked so you don’t have to bake it super long. I like to throw it on the pan and fry it for a few minutes to brown it on the outside. grilling would work great too.  It doesn’t even have to be warm in inside, just a nice brown on the outside. Then I sliced kiełbasa and placed it on a baking sheet.

I chopped all of my veggies, broccoli in florets, zucchini in slices and diced the rest. You don’t want to cut them in pieces to small because they may dry out or get burned faster than the rest.

I arranged my vegetables and kiełbasa on the baking sheet.

Then I sprinkled it gently with olive oil, you don’t need a lot of fat slice there will be some extra coming from the sausage. Finally, I dusted everything with oregano, garlic powder, salt and freshly cracked pepper and baked at 400 F for 15 minutes. You can additionally broil it for a few minutes to make it more crunchy.

  • 1 lb of kiełbasa (polish smoked sausage)
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 2 small zucchinis
  • 1/2 medium red onion
  • 1 small broccoli head
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of garlic powder
  • salt and pepper to taste


  1. Preheat the oven to 400 F.
  2. Brown the sausage on the pan and slice it.
  3. Chop the vegetables.
  4. Arrange kiełbasa and vegetables on a baking pan and sprinkle with olive oil, oregano, garlic powder, salt and pepper.
  5. Bake for around 20 minutes and broil for additional 5, if extra crispiness is desired.
